What water do you use in your cafe?

In the café, we use reverse osmosis (RO) water blended with filtered city water, resulting in a total dissolved solids (TDS) range that usually falls between 50-90 ppm, depending on the day. Our carbonate hardness (KH) typically sits around 20-30 ppm.

For quality control and cupping, we use Aquacode water with a hardness typically between 70-90 ppm. Every batch roasted on our Loring is evaluated using this standard.
